Goat Cheese Salad

Johnny's Italian Steakhouse Recipe

4 ounces spring mix
1 ounce carrots, julienne
1 ounce green apple, julienne
1 ounce blue cheese, crumbled
2  goat balls
2 crostini
2 ounces balsamic vinaigrette

Place salad greens in a large chilled bowl. Drizzle the dressing on top of the salad. On one side place the carrots and on the opposite side place the apples. Take 2 one ounce goat cheese patties coated in pecan breading, and brown until golden. (Most would tend to fry them, but a healthier way could also be to bake them in the oven for a few minutes.)

Take goat balls and place in the center of the salad. Garnish with the blue cheese crumbles in the middle and two crostinis on the outside.
