Steak Soup

Black Angus Steakhouse Recipe

Makes 12 servings

1 pound beef, ground, 95%
3 cans chicken broth
1 can beef consomme
1 cup crushed tomatoes
2 cups diced onion
1 cup diced carrot
1 cup diced celery
2 tablespoons Worcestershire sauce
1 tablespoon minced garlic
1 teaspoon Tabasco sauce
1/2 teaspoon ground black pepper
1/4 cup margarine
1/2 cup flour

Brown ground beef in Dutch oven or regular pot over medium high heat. Drain and put back into pot and add all of the ingredients except for the butter and flour.  Cook for 2 1/2 or so hours. Taste; if needed add more ground black pepper.

At end of that time, in small saucepan, melt butter or margarine, add the flour and mix till brown. If it does not brown don't worry. If you leave butter on to brown then add the flour, it is better. When browned, add some soup to it to lightly mix together then put all into pot with other ingredients and whisk together till blended. Cover and cook for 10 or 15 minutes more.
