Golden Gazpacho



GOLDEN GAZPACHO
ChopHouse Recipe

2 mangos, diced
8 yellow tomatoes, diced
2 yellow peppers, diced
1/2 red onion, diced
2 cucumbers. peeled and diced
1/4 cup sherry vinegar
1/2 cup tomato juice
Tabasco sauce, to taste
Worcestershire sauce, to taste
salt & pepper, to taste

Place the mango, yellow pepper, tomato and cucumber in a stainless steel bowl. Add the vinegar, tomato juice and seasonings. Let this marinate for 24 hours. Blend with a hand blender on high until uniform and slightly chunky. Taste and adjust. Keep chilled. Thin out with cold water as needed.
