Salmon Romesco



SALMON ROMESCO
ChopHouse Recipe

Romesco Sauce:
1/4 cup almonds
2 cloves of garlic
1/4 cup extra virgin olive oil
dash of sherry vinegar
1 cup red peppers
1/4 cup tomato paste
salt and pepper to taste

To make the romesco sauce combine and puree the ingredients listed. Saute an 8 ounce salmon steak with olive oil until tender, about 5-10 minutes. Garnish plate with fresh arugula and watercress with a little lemon oil, place salmon on top, then drizzle with romesco sauce.
