Spicy Corn & Crab Fritters



SPICY CORN and CRAB FRITTERS
ChopHouse Recipe

Serves 10

Dry Ingredients:
2 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
3 teaspoons of cayenne pepper

Wet Ingredients:
6 tablespoons canola oil
3/4 cups milk
1 egg

Fold:
2 ears of corn off cob
6 oz Lump crab meat
1 teaspoon chopped chervil
1 teaspoon chopped chives
1 teaspoon chopped tarragon
1/2 small diced red onion
1/2 teaspoon chopped garlic 
1 scallion, diced 

For the fritter batter, combine all the dry ingredients (flour, baking powder, cayenne pepper and salt) in a large bowl. In another smaller bowl, whisk together all wet ingredients (oil, milk, and egg). Add the egg mixture to the flour mixture and combine until all dry ingredients are moistened. Next add the fold Ingredients: corn, crab, chervil, tarragon red onion, scallion and garlic. 

Heat oil to 375 degrees in a deep fryer.  Using a small ice cream scooper, carefully place batter into a deep fryer cook until golden brown.
