Peach Cobbler



PEACH COBBLER
Fleming's Prime Steakhouse Recipe

Serves 5

2 1/2 pounds frozen peach halves
3 ounces lightly salted butter
3 1/2 ounces lightly packed brown sugar
2 teaspoons ground cinnamon
1 1/2 ounces dried cranberries
3/4 cup peach schnapps
vanilla ice cream for serving

Streusel Topping:
3/4 pound all purpose flour
1/4 pound each: granulated sugar and brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
6 ounces salted butter, cold, cut in 1 inch cubes
1 teaspoon pure vanilla extract

For topping, put flour, both sugars, cinnamon and nutmeg in mixer with paddle attachment. Add butter and vanilla. Mix on medium 15 to 20 minutes. Mixture should bind together. Heat oven to 350 degrees. Thaw peaches until soft and then cut in half. In pan big enough to hold peaches in single layer, melt butter on medium high until light brown. Add peaches, brown sugar and cinnamon; 8 to 10 minutes. Add cranberries and schnapps; 2 minutes. Put peaches on sheet pan to cool, 10 minutes. Divide peaches among 5 oven safe dessert dishes. Break streusel topping into 1/2 inch pieces. Sprinkle on fruit to cover. Bake 20 to 25 minutes or until topping is golden and crisp. Serve with vanilla ice cream.
