Key Lime Pie


KEY LIME PIE
J. Alexander's Restaurant Recipe

Crust:
2 cups graham cracker crumbs
1/3 cup sugar
1/2 cup butter, melted
1/2 cups pecan pieces

Mix all above ingredients and press into 9 inch pie plate.

Filling:
3 egg yolks
1 (14 oz.) can condensed milk
1/2 cup key lime juice (You can get this bottled. Saves lots of time and hand pain from squeezing and seeding 12 limes.)
3 tablespoons water
2 cups whipped cream or cool whip

Preheat oven to 325. Beat egg yolks by hand with whisk just until blended. Slowly add the condensed milk while stirring with whisker. Add lime juice and water. Stir. Mixture will thicken. Pour the mixture into crust and bake for 20 minutes or until middle is set and not jiggly when moved.
Cool completely int he refrigerator. Add whipped cream or cool whip.
