Flying D Chili

Ted's Montana Grill Restaurant Recipe

2 pounds ground bison or chuck roast
1/4 cup vegetable oil
2 cups diced onion
1 Tablespoon fresh garlic, chopped fine
1 quart water
3 each beef bouillon cubes
1 cup tomato paste
1 1/2 teaspoon salt
1 teaspoon oregano leaves
1/2 teaspoon cayenne pepper
1 1/2 teaspoon sugar
1 1/2 teaspoon ground cumin
3 tablespoon chili powder
1 cup stewed tomatoes
1 cup ranch style beans

Heat the oil and brown meat, breaking up any large chunks. Drain off the excess fat. Add the onion and garlic. Saute until soft. Add water, bouillon cube, and tomato paste. Bring to a boil. Add the seasonings and simmer for 10 minutes. Add beans and stewed tomatoes. Cook for one additional minute.
