3 parts Hennessy V.S cognac
2 parts 10 Cane Rum
splashes of fresh orange and lemon juices
splash of simple syrup

Combine ingredients with ice in cocktail shaker. Strain and pour into pilsener glass.

POMEGRANATE MARTINI

equal parts citrus vodka and pomegranate liqueur
splash of sour mix
1 ounce cranberry juice
citrus foam for garnish

Combine liquids and sour mix with ice in cocktail shaker. Shake, strain and pour into martini glass, with cherry for garnish.

To make citrus foam: Mix equal parts pasteurized egg whites and sour mix in whipped-cream-style dispenser that contains carbon dioxide cartridge. Foam dissolves quickly when used as topping; don't spray until just before serving.
