Bananas Foster

Stock Yard Restaurant Recipe

Serves 4

4 ripe bananas
1/2 cup brown sugar, packed
1/4 cup margarine
dash cinnamon
1/3 cup light rum
vanilla ice cream

Cut the bananas into halves lengthwise, then crosswise. In a 10 inch skillet heat the brown sugar and margarine until the sugar melts. Continue cooking and stirring for 2 minutes or until the ingredients slightly thicken. Add the bananas.

Cook slowly for 1 to 2 minutes more. Sprinkle lightly with cinnamon. Add rum. Carefully ignite the rum with a long match. Spoon the liquid over the bananas until the flames die. Serve immediately over ice cream.
