Broccoli Casserole

Stock Yard Restaurant Recipe

Serves 6-8

2 (10 oz.) boxes frozen broccoli
1 cup mayonnaise
1 medium onion, chopped
1 (14 3/4 oz.) can cream of mushroom soup
2 eggs, beaten
1 cup grated cheddar cheese
salt and ground black pepper to taste
1/2 cup Ritz crackers, crushed
2 tablespoons melted butter

Preheat oven to 350 degrees. Grease an ovenproof casserole. Cook the broccoli according to package directions and drain well. In a large bowl combine the soup, cheese, onions, eggs, mayonnaise, salt and pepper. Stir in the broccoli and spoon into the prepared casserole. Combine the butter and cracker crumbs. Sprinkle over the broccoli mixture. Bake for 45 minutes.
