French Onion Soup Gratin'ee

Stock Yard Restaurant Recipe

Serves 6

2 large onions, thinly sliced
2 tablespoons butter
1 garlic clove, minced
1 tablespoon flour
6 cups beef broth
1/2 teaspoon thyme
1 cup rated Swiss cheese
Salt and ground black pepper to taste
12 thin slices French bread

In a large saucepan heat the butter and add onion, garlic, salt and pepper. Cook the mixture over low heat, stirring until the onions are golden brown. Sprinkle flour over the onions and cook while stirring for 3 to 4 minutes. Add the broth and thyme and bring these ingredients to a boil, reduce heat and simmer for 30 minutes.

To serve, fill bowls about half full with soup. Top each serving with a slice toasted bread and top with Swiss cheese. Place under the broiler until cheese is bubbly.
