Fresh Apple Cake

Stock Yard Restaurant Recipe

Serves 8-12

1 1/4 cups vegetable oil
2 cups sugar
3 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda
3 cups chopped Granny Smith apples
1 1/2 cups chopped walnuts or pecans
1 teaspoon cinnamon

Preheat oven to 325 degrees. Grease and flour a 10-inch bundt pan. In a large bowl combine the oil, sugar, eggs, salt and vanilla and mix well. Set aside. In a small bowl mix the flour and baking soda. Combine the flour mixture and creamed mixture and creamed mixture and mix well. The batter will be very thick. Add the apples, nuts and cinnamon. Mix well and pour the batter into the prepared bundt pan. Bake 1 and 1/2 hours. Cool the cake in the pan for 10 minutes, then invert the cake onto a wire rack and cool completely.

1/2 cup butter
1/4 cup heavy whipping cream
1 cup light brown sugar
1 teaspoon vanilla

Combine all the ingredients in a medium saucepan and boil for two minutes, then spoon over the warm cake.
