Rice Almondine

Stock Yard Restaurant Recipe

Serves 4-6

1 medium onion, chopped
2 teaspoons margarine or olive oil
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1 1/4 cups chicken broth
1 1/2 cups instant brown rice
1 cup frozen green beans, thawed
2 tablespoons sliced almonds, toasted

In a large saucepan over medium heat add margarine or olive oil and cook onions until tender. Add broth, lemon juice and garlic powder and bring to a boil and stir in the rice. Reduce the heat to ow and cook for 5 minutes. Remove from the heat and stir in the green beans and almonds. Allow to stand for 5 minutes before serving.
