Seafood Gumbo

Stock Yard Restaurant Recipe

Serves 6-8

1/4 cup vegetable oil
1 medium onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 cup chopped celery
2 cloves garlic, chopped
3 cups bay leaves
1 cup English peas
1 cup whole kernel corn
2 cups frozen cut okra
2 cups diced tomatoes, undrained
1/2 pound shrimp, peeled and deveined
1/2 pound white fish of you choice, uncooked
1/3 cup white wine
2 teaspoons File' seasoning
1/4 cup Old Bay Seasoning
cooked rice
salt to taste

Heat oil in a large pot over medium heat and add the onions, celery, peppers and garlic and saute until tender. Add wine, okra, bay leaves, corn, peas, Old Bay Seasoning, salt and broth. Cover and cook for 25 minutes.

Stir in the fish and shrimp. Reduce heat and simmer for 10 minutes or until the shrimp are completely cooked. Remove the bay leaf, add the File' and heat through. Spoon into bowls over cooked rice.
