Triple Pepper Chili

Stock Yard Restaurant Recipe

Serves 6-8

1 pound ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon chili powder
1 green pepper, diced
1 teaspoon oregano
1 bay leaf
2 teaspoons ground cumin, optional
1 (16 oz.) can chopped tomatoes
2 teaspoons tomato paste
1/2 cup water
1 (16 oz.) can kidney or black beans, optional
1 tablespoon honey
ground cayenne pepper to taste
1 small jalapeno, finely chopped
cheese, sour cream and chopped parsley

In a large skillet brown the ground beef, Adding cayenne pepper halfway through the cooking process. Drain and place the ground beef in a crock pot. Combine the remaining ingredients and add them to the crock pot. Set temperature to high until the beef mixture reaches a slow boil. Cook the chili on low for 2-4 hours.
