Stockyard Restaurant: Beer Batter Onion Rings


Stockyard Restaurant Recipe

Serves 4-6

1-2 large onions
1 1/4 cups all-purpose flour
1 teaspoon baking powder
salt to taste
1/4 teaspoon yellow food coloring, optional
1 cup beer
1 egg, slightly beaten
1 tablespoon vegetable oil
vegetable oil for frying

Peel the onions and cut them into quarter slices and separate the rings. In a large bowl combine the dry ingredients, beer, egg, food coloring and tablespoon of oil. Mix until smooth.

Heat several inches of oil in a deep skillet to 375 degrees. Using a fork, dip individual onion rings in the batter, coating well on both sides. Fry onion rings until golden brown, about 3 to 4 minutes. Serve with Cajun Sauce.

Cajun Sauce:
1 cup mayonnaise
1 tablespoon capers
1/2 tablespoon parsley, fresh or diced
2 1/2 tablespoons Cajun seasoning
1/2 tablespoon hot sauce

In a small bowl combine all the ingredients and mix well. Keep refrigerated.
