Stockyard Restaurant: Boiled Shrimp With Cocktail Sauce


BOILED SHRIMP with COCKTAIL SAUCE

Stockyard Restaurant Recipe

Serves 2-4

Boiled Shrimp:
2 quarts water
2 large lemons, halved
1 bay leaf
2 tablespoons salt
1 garlic clove
1 1/2 pounds medium shrimp

In a large pot bring the water to a full boil. Add the lemons, bay leaf, salt and garlic. Return water to a boil and add the shrimp, boiling for 5 to 8 minutes. Drain shrimp well. When cool, peel and de-vein the shrimp

Cocktail Sauce:
1 cup ketchup
1/2 cup chili sauce
1 1/4 tablespoons horseradish
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
salt and ground black pepper

In a small bowl combine all the ingredients. Chill the sauce for 1 to 2 hours before serving with the shrimp. Makes 2 cups.
